Pecan flour is a nutrient-dense, gluten-free, and low-carb flour made from ground pecans, defatted during oil extraction to produce a fine, soft powder. It features a rich, buttery, slightly sweet, and nutty flavor, making it an excellent, healthier alternative to wheat flour in baking, especially for Keto or Paleolithic diets.

Key Characteristics and Uses:

  • Flavor/Texture: Rich, buttery, and nutty with a toasted smell.
  • Health Benefits: High in protein and antioxidants (e.g., Vitamin E).
  • Dietary Features: Gluten-free, low-carb, and low-sugar.
  • Baking Applications: Best for cookies, macarons, cakes, muffins, and crusts (often used at a 1:1 ratio with wheat flour).
  • Savory Applications: Used as a thickener for sauces/soups or as a coating for meat/fish.
  • Storage: Due to high oil content, it is best stored in the refrigerator or freezer to prevent rancidity.

Pecan flour is often referred to as pecan meal, although true flour is typically finer and less oily.
